About Us

Since 1999

The Lighthouse Cafe was born out of desire to bring a Light to the community of Berthoud and provide a safe harbor to all who enter. A warm, friendly place where relationships are built and true community can be experienced. At the Lighthouse Cafe, we are all about relationships; our relationship with you, with our producers, and with the men, women, and children who grow our coffee. We strive to have a first hand relationship with everyone we serve, or support through the purchase of the products we use.

Chef Hollis Hunt

Chef Hollis Hunt has had a passion for food since he was young, but his culinary career didn’t begin until the construction market crashed in 2006. After losing everything, Chef Hollis realized he wanted to do what he loved. He left his job as a home builder and took a cashier position at the Lighthouse Cafe where, in 2011 he would be promoted to Head Chef and Business Manager. Seizing the opportunity to work for classically trained Chef Jamie Degnan and his wife Tiffany Degnan at Origins Catering, Hollis credits them for teaching him many of his culinary and business management skills.

Working closely with others on his team, Chef Hollis helped to create a restaurant that is unique and rivals other great restaurants in Colorado. As the head chef, Hollis developed signature recipes, made in-house, using the finest fresh ingredients available. He is extremely meticulous about hand selecting the producers that grow their fresh produce and raise their beef, chicken, and pork. Chef Hollis guarantees his food to be free ranging, hormone and antibiotic free, humanely raised, and locally sourced (whenever possible). Chef Hollis strives to provide the freshest, healthiest, tastiest, friendliest, and most affordable dining experience around.

Chef Hollis believes in relationships and is passionate about knowing each of his customers and catering to their wants and needs. He has changed his menu offerings and his products to suit the requests of his many loyal customers. Chef Hollis hopes to have a first-hand relationship with every vendor and producer and most importantly those he serves, his customers.

Our goal is to bring you the best breakfast and lunch experience possible. We meticulously hand select the Producers that grow our fresh produce, and raise our beef, chicken, and pork; guaranteed to be free ranging, hormone and antibiotic free, humanely raised, and locally sourced (whenever possible). This allows us to provide you with the tastiest, healthiest, most affordable meal possible.

We create every recipe from scratch in our kitchen; no boxed, bagged or canned products here. Our soups are homemade; and we serve direct relational trade coffee, locally roasted 3 days before we fresh grind it to bring you the absolute best cup of coffee or specialty coffee drink around.
